Gluten-free Vegan Carrot Cake

I know we’re almost halfway through November but I just felt inspired to share some things from the past month (mostly October!) that have added value to my life. Hopefully, you’ll be inspired too!

I know this is a vegan and travel blog but I’m gonna throw some lifestyle and personal development stuff in the mix too. Why not eh?


People seem to have a love-hate relationship towards meditation. For some, it can be frustrating as your mind constantly wanders off thinking about what’s for dinner. For others, it becomes an integral part of their daily life.

At first, it was so hard to sit there and ‘try’ to meditate. But, once you let go and focus on your breathing or a mantra, you go deeper into your mind and it’s kind of awesome.

And some days it’s easier than others. If I’ve got a lot going on it’s much harder to keep my attention on the body and not drift off.

Try starting out with a short, guided meditation like HeadSpace or something similar on Youtube. Eventually, you can meditate for longer and either listen to music, sit in silence and meditate on a particular thought or mantra.

But why should we meditate?

Our lives are so loud and busy all of the time that we don’t take the time to look inward and listen. Making meditation a daily practice when I wake up has really helped to relieve anxiety, and I feel more present.

Sometimes I’ll see bright lights and different colours, and often answers I’ve been searching for just kind of come into conscience. It’s all a bit weird and wonderful!

Hesitant? Why not give it a go for 10 minutes a day for a week or so and see what you think!



Shampoo Bars

In a quest to bring sustainability to other areas of life besides veganism, I’ve become more mindful of packaging. It’s not too difficult with fresh foods and using your own to go coffee cups, but the beauty industry is a little more tricky.

After much research and figuring out what my hair likes, I have to say I’m a total fan of Lush’s Seanik Shampoo Bar.

My Dad and step-mum brought me a new brand in a tin to try from Wholefoods. I’ll update you when I’ve tried it!


Everything Fall!

Fall, or Autumn as we say here in the UK, is just the cosiest season by far!

Thick sweaters and golden leaves everywhere, it’s just so Instagram.

And of course, you can’t have fall without pumpkin spice. My sister and I have gone a little extra this year. From baking pumpkin pie to drinking pumpkin spice coffee, I even have a candle that smells of it!

Breakfast Smoothies

I know breakfast is supposed to fill you with energy for the day but it was starting to make me lethargic. After eating my porridge I’d sit at my desk ready to work and the brain fog was kicking in. Then I tried not eating breakfast at all, but after working out every morning I didn’t have the fuel for the day.

So I remembered a smoothie I used to enjoy. It’s not so carb heavy and doesn’t cause the insulin spike that leaves you shaky by lunch.

I don’t really have an exact recipe, but roughly:

  • A cup of dairy-free milk like almond or coconut
  • A piece or two of frozen spinach (they come in little blocks)
  • A big handful of Frozen berries, I like blackberries, raspberries and red currents but any you like will work!
  • 1 tablespoon of almond butter
  • 2 teaspoon of chia seeds
  • 2 teaspoons of ground flax
  • Cinnamon
  • 1 tablespoon of pea protein powder
  • If I need more body fuel than brain fuel I’ll add in some oats too.

Just blit in a blender and add water if needed. You’ll have to play around with the ingredients to see how you like it best but this is just a general guide and some inspiration!

I find the higher fat and protein content gives me way more energy and focus than high carb breakfasts.

Working Remotely

Last month I started working remotely full time and honestly it’s even better than I imagined!

Sure, you have to work a little harder on the work-life balance thing but it’s so freeing. Being able to set your own hours and work when you know your most productive is way better. I’m a total morning person, so to be able to get a few hours in at 7 am is way better than being stuck in traffic!

I can go out for a walk when the weather’s nice and sit in a coffee shop for hours on my laptop, it’s the best!

Getting Back into Baking!

My Nan taught me to bake when I was very young, and I still always use her tips like listening to your cakes to see if they’re cooked!

Recently I’d not been baking as much. I think I was a bit down after having an operation and not being able to do the things I loved like yoga. Many motivation video and books later I decided it was do something I’d always loved and purely for the joy of it.

Now gluten-free vegan baking is not a walk in the park. The moisture level has to be perfect or you’ll end up with a crumbly mess!

After some practice, there have been some very successful banana bread, almond sponge, carrot cakes and pumpkin pie!

I’ve realised food is my passion, and I want to be able to help and inspire others. You can totally enjoy any meal or dessert regardless of dietary needs.

So that’s my first top favourites for October. I think it will be interesting to see how my tastes and faves change over time!
